SOME people have green thumbs in the garden while others, like Ana Sofia Carrion, have a magic touch in the kitchen.
CARRION is the enterprising young baker behind Cofi's Cookies, an artisanal business spun out of a love for cooking and based in a Santurce kitchen. Here she concocts goodies like cookies and rum cakes made of fine organic ingredients plus customized requests. In addition to their optimum taste-quotient, these mouth-watering temptations are also nice to look at and marketed in appealing packaging. 
"I'VE always loved cooking," said the 25-year-old budding entrepreneur whose studies took her in the opposite direction of the kitchen, having explored different fields of study such as psychology, photography, and the French language. But now that she is firmly ensconced in the kitchen, Carrion is prepared to go all the way to grow her two-year-old business and is now adding non-organic choices for consumers with a smaller budget. Given the finer ingredients, organic baked goods tend to run a bit pricey: $10 for a dozen cookies and $35 to $40 for the cakes. 
RECENTLY, she invested a tidy sum to upgrade her working quarters with the addition of an industrial stove that allows her to bake almost eight times more cookies than the old stove allowed her. Just consider: now, instead of baking 12 to 18 cookies at one time, she manages a whopping 150 cookies of all kinds like oatmeal, ginger, chocolate chip and coconut cookies. Enough to warm the heart of any baker!
CARRION'S baked goods, which can easily be ordered by phone or e-mail, make a special treat for parties and school activities. She said people have even ordered them to celebrate a mortgage closing. You can also find them occasionally at Meats N' More on Loiza St. Hopefully more stores will jump on the bandwagon and carry these treats because, let me tell you, they sure are good!
